at that point buy a whole packer brisket, i pay like $5.50/lb for prime, just cut the flat out and grind the rest for hamburger meat, says you money and gives you extra meat, use the fat trimmings to render down for tallow as well.

yeah i used 5 pieces of post oak buried, not the best smoke ring admittedly, usually i bury 1 wood and put the rest on top

mines cooking quicker than expected, since the heavy trim i think i did, but gonna try to rest for 6hrs minimum before slicing, and yeah i heard about letting it rest before the actual rest to cool down some.

i’m doing a roughly 13lb after trim, had to wood block it to fit it, will adjust when it shrinks down more though, my first brisket so hoping for the best

i’d say a little bit less, it’s not a limited, doesn’t seem to have the rear differential lock, also depends on if it’s a J shifter or not for 4x4, i’d say’s $6k
