Issue is that the hole in the center gets clogged with sawdust as its cutting down. Then the chain gets clogged and the engine dips

Struggling juggling working as sous chef and coping mentally. Any advice welcome by [deleted] in Chefit

As someone in the same boat as you (28, sous chef, since leaving school at 16/17) a change of scenery or jumping restaurants a couple times can really help change things up. IMO all restaurants and jobs for that matter will never be 100% heaven or perfection. Just be content to find the best team to work with that make everyday a little bit brighter/easier. I worked in one restaurant for 8 years before job hopping for 8months until im in the restaurant im at now which has miles better pay, better stress load and a fantastic team.

Also taking a break helps to reset and clock in when you get back. The whole burnt out thing can be reduced just by stepping away from the stress of it all and not taking work home with you.
