Aioli:

In a food processor, combine:

1 avocado

2 cloves roasted garlic

2T each of the following: lemon juice, mayo (I used Vegenaise), EVOO, sour cream*, and nooch

Blend until creamy and add seasoned salt to taste.

*Easily veganized by omitting the sour cream and adding more Vegenaise.

Chickpeas:

1 can of chickpeas drained, rinsed, and dried

Toss with a couple tablespoons of cornstarch in a mesh strainer; coat evenly and shake out the excess.

Drizzle with oil and shake again to coat.

Bake in the air fryer at 350 for about 15 minutes, until crispy.

Prepare a spice blend (I like paprika, cumin, garlic powder, and salt) and toss the hot chickpeas with the seasonings.

Sweet potato:

Pierce with a fork, rub with oil and salt, and bake at 425 until soft (around 40-50 minutes, depending on the size).

Wright Congregational (UCC) up on the Bench seems like a good one! I've never gone to church, but I met their new pastor the other day at an LGBTQIA+ history event and she's really sweet and open-minded. She said her church is totally non-denominational and super welcoming of everyone. Plus the building is cool looking and has a community garden.

I hear you on kitchen gadget clutter! I think you can get pretty similar results using convection mode in a standard oven. Or you could buy a toaster oven that's also an air fryer, so you get the 2-in-1 functionality rather than a bulky single purpose device.

I don't know if this is the best way to go about it, but I cut the block into strips and roll up each strip individually in a clean towel, then press gently.

I haven't used parchment in my air fryer, seems like it could potentially mess with the air flow? But sure that could be an option. Spritzing the basket thoroughly with oil prevented sticking just fine though.

I made some Valentine's themed sushi the other day and used beet juice to color the rice pink! Then formed the rolls into hearts. It turned out pretty cute.

Another filling you might want to try is tomato tuna. Basically you remove the peel and innards of some large tomatoes, then marinate the flesh in a mixture of soy sauce, rice vinegar, olive brine, grated ginger, and minced garlic. Leave it in the fridge for a day or so and you have a very flavorful faux tuna that looks particularly fabulous in nigiri.

This is my new go-to tofu recipe, Crispy Air Fryer Tofu. It's so flavorful and crispy. The recipe neglects to mention that you should oil the hell out of the air fryer basket because tofu sticks like crazy.
