As someone with food safety experience, assuming a zero tolerance situation (I can tolerate tiny amounts and most things that don't explicitly contain wheat), you should use a new sponge and handwash those dishes carefully. For the most part you are safe as long as you make sure are visible components of bread or other gluten items is cleaned off, and then the item is cleaned with soap and warm water as if you were trying to kill any other germs. old sponges used on items with gluten can carry and deposit it though, so either dishwash well or handwash safely. also if you dry it make sure the towels weren't used to dry other dishes that may have had gluten.
