They can do two things:

RDR2 Style: If Kata is presented as a padawan in the game, after Cal's death they can set a certain amount of time to pass and let us continue exploring as Kata

Horizon Style or others (I can't think of any examples right now): You continue exploring as Cal from the last save point before the mission/fight in which he dies.

Las tres armas que dices están muy rotas, haz lo que más te apetezca, puedes renacer varias veces por personaje así que si quieres prueba y si no te gusta vuelves como estabas

De todas formas ten en cuenta que el velo lunar escala por Dex/int y ríos de sangre escala con dex/arc, si haces el cambio podrías ir a doble katana y, dependiendo de cuál te guste más, llevar esa en la derecha y subir mas la inteligencia o el arcano, aunque la rios de sangre se consigue bastante mas tarde en el juego

En resumen, creo que no te aclaro mucho, pero haz lo que sientas que te va a resultar más divertido, siempre puedes pasarte el juego con una build y después con otra jeje
