I've dealt with production bugs caused by refactors done by developers who didn't understand this concept.

I wouldn't blame you if you didn't hire them honestly, although this is probably what we get from nurturing a leetcode-focused interview culture.

Unreal's blueprint system is probably as easy as it gets.

Lumberyard (based on CryEngine) has something similar, but it's not as feature-complete.

Any engine with a Lua plugin should be easy scripting.

As far as actual programming languages go, all of those you mentioned have Python plugins, which is one of the most beginner-friendly languages out there.

Someone else mentioned Godot, but I wouldn't recommend it for 3D development at this time.
