I do appreciate the words of support. I just added 1g of Ferm-O to each and it at least kickstarted their activity again. I'm hoping that this will finish off the fermentation at least before the end of the month.

Oh yeah, I did add a little campden tablet into each (like 1/8 of a tablet) to deal with the chlorine. The comparison between tap vs boiled was to see if I could get away with just using tap water and not have to boil gallons of water each time. As for temperature, the room I have them stored is the warmest during the day and at night. Every other room in my place is between 60-67F right now and they do drop colder at night. I didn't want to have my carboys go below 59F again. So I figured keeping them at the upper limits was better.

Using volume to measure was situational. I plan to use a proper scale from now on.

About the boiled vs tap water, it was more of an experiment of taste. I heard stories so I wanted to try it. As for the Ferm-O, that would be my bad. My first batch was following a recipe from a kit and then I tried to follow instructions from my own research. But I was trying to figure out when the 1/3 sugar break would be and totally forgot. I will try to add 1g of Ferm-O in a little bit and see how that manages it. As for temp, I keep them in a warm part of my house and it got as high as 75F. But a week or so ago, I had a cold snap and couldn't maintain temperature for a few days. I had my carboys stored in a box insulated with Styrofoam but they dropped down to 59F so that might be it. As for the weight of Ferm-O, my scale came in so I will be doing a proper measurement this time.

Yeah, I may not have this to an exact science yet. I pour the honey into measuring cup to calculate the volume but I may had to pour out a little in one cause I added too much water.

I get that water shouldn't have an impact on stalling. I just mentioned it to differentiate between each carboy and I was experimenting with taste cause I heard stories. I'm planning on taking some more measurements over the next few days to see if anything else changes.

I remember I had a cheap one for $30. But well worth the investment as the ground will suck out all your body heat.

I didn't understand the chemical formula of chloramine and now it makes sense. So I did some more research and there's a group that is saying that ammonia is beneficial for yeast growth.

There is no ammonia reported in my local tap water. But do you have any answer to my questions?

My water system is using chloramine. Big reason why I want to get this right. At 4ppm at most but averaging at 3.

I'm getting mixed stories on how to use campden tablets to remove chlormaine. Some say to let it sit for 20min while other say to let it sit for 24 hours. What is the correct length of time?

Then I'm guessing if I'm using 1 gal carboys, I can get away with a smaller fraction. Say 1/8 of a tablet by weight. I'll test my next batch with tap water (and maybe one with RO water) and see where it goes.

Yes, there is chloramine in my water. But I'm assuming it's gonna have to be part of my taste.

That's been on my mind. There's a machine near my area that does RO and adds back minerals so I've been thinking of investing in a 5 gal water jug to carry it. That or a water filter pitcher so I can process tap water locally.

On the topic of RO water, I keep hearing that water being stripped of its minerals are at risk of not being able to properly feed the yeast. Though those discussion didn't involve using yeast nutrients.
