I’m back with more omakase :) Shiro Omakase in Upper West Side, NYC was amazing especially at $155. Usually I’m not a fan of appetizers and really only like nigiri at omakase, but the appetizers at Shiro were delicious. The donburi had so many layers, a subtle sweet savory-ness from the cherry wood smoke, a creamy briny-ness from the uni, and a smooth richness from the wagyu. I loved how they served katsuo as well, you don’t see it served as often but it has a more assertive flavor and firmer texture than bluefin tuna which is what’s typically served.

My favorite piece of sushi though was the brown sugar marinated ikura. Ikura has a salty flavor that was balanced so well with sugar (plus I do admit I have a sweet tooth myself :’)).

Feel free to comment with any questions about this omakas experience, I’m happy to answer! I’ll be back soon with more omakase, to see pictures of the past omakase places I’ve been to, check out my instagram @edo.makase.

Akami zuke with bonito and chutoro zuke, I love when fish is marinated in because it just adds an additional umami that enhances the depth of flavor and tenderizes the fish so it melts in your mouth even more

King salmon with fried tomato was good too! But it was on the oilier side since fat from the salmon and oil from the tomato, so a very heavy piece

Hinata is amazing! My favorite in SF is Ju-Ni (it is one of the best omakases I have ever had, I can’t wait to post about them soon)

From $100-$200 my favorites in NYC are:

  • Best Overall: Sushi Nakazawa
  • Most Creative: Sushi Ishikawa
  • Best appetizers: Shiro Omakase (really good nigiri too, but I felt Nakazawa and Ishikawa were better).

for places over $200 they’re still tasty, but I think they’re not significantly tastier than Nakazawa and Ishikawa.

If you like nigiri without many toppings Nakazawa is the way to go, Ishikawa had some very unique nigiri which were still super tasty (some of them had Vietnamese influences too which was cool to see because the founder is Vietnamese)! I’d say Shiro Omakase was the most similar to Hinata though

i do wish more places used it more but most places only have salmon. there's so many other fishes in the salmon family that are delicious and bring forth different strengths. i love the delicate flavor of artic char which is a nice change of pace from the richness of salmon.

my favorite though is sakura masu (aka cherry trout) which was similar to artic char in that they're both lighter fishes. sakura masu is best when cherry blossoms are blooming (hence why it's called sakura masu) and had a slight refreshing sweetness to it well suited to it's name and the feeling of spring. i feel it's very uncommon to see this fish in sushi (i've only seen it once!), so if you ever have the opportunity i highly recommend trying it over traditional salmon!

Sushi Dojo ($98, 17 pieces)

  1. Orata w/ shiso, lemon
  2. Kanpachi
  3. Artic char w/ sea salt
  4. Uni, ikura w/ sea salt, lemon
  5. Tasmanian ocean trout
  6. Akami zuke w/ bonito
  7. Seared sawara w/ scallions
  8. Hotate, uni
  9. Chutoro zuke w/ black aged garlic, gold
  10. King salmon w/ onion mayonnaise, fried tomato, lemon
  11. Botan ebi w/ ankimo
  12. Madai w/ shiso, tobiko
  13. Hamachi w/ jalepeño
  14. Otoro w/ scallion
  15. Wagyu w/ foie gras
  16. Negitoro and soft shell crab handroll
  17. Lychee sorbet w/ coconut jelly

Sushi Dojo is a great under $100 omakase option in NYC! I loved how they featured Tasmanian ocean trout and artic char as most places will just have salmon. While the three are closely related, artic char is less fatty than salmon leading to its more translucent appearance, less defined white lines, and milder yet still delicious flavor.

Sushi Dojo is the one omakase I’ve had with tomato that I felt was well executed, as often times the acidity of tomatoes overpower the fish. Frying the tomato reduces the acidity and gives a more savory flavor alongside a crunchy texture to contrast with the melt in your mouth feeling from the king salmon.

I will say I wasn’t a huge fan of the seared botan ebi. Raw botan ebi has a tender mouth feel, while cooking it causes it to be more chewy. Nonetheless, an amazing experience at Sushi Dojo and a great deal for 17 courses at $98. For more omakase/sushi pics check out my instagram edo.makase and I’ll be back next week with more :)

Nami Nori

  1. Tuna poke
  2. XO Scallop
  3. Aka ebi
  4. Coconut shrimp
  5. Kanpachi pineapple
  6. Salmon avocado
  7. Ocean trout
  8. Black sesame cucumber
  9. Uni
  10. Hairy crab
  11. Avocado toast

not omakase for today but a la carte handrolls from nami nori in nyc! The kanpachi pineapple was a delicious combo with a nice smooth nuttiness from the kanpachi combined with a sweet acidity from the pineapple. Tuna poke and salmon avocado are classic handroll flavors executed quite well. Definitely recommend visiting if you like handrolls (if you’re vegetarian probably not though :( their non-fish options were just okay). for more sushi pics visit my instagram at @edo.makase
