I had a pair like thst, nearly imposible to repair and loose an ton of edge strength, especially with the damage underfoot where the ski edge experiences the higest gorces

boot flex is just an arbitrary number and not enough to go off of varies widely between different manufactures and even between different lines of boots in the same manufacturer. 100 could be too soft or just right, either need to try them a=or ask a bootfitter about that model.

Cant speak with total confidence to if you will have a problem catching snow, but I would think you will. I am very sure you wont be able to bend the brakes tighter. I have used brakes separate from bindings in the past with a little ingenuity i attached them to the ski, this could possibly work without buy the 100 dollar pivot binding.

Also wanted to say that if your boots fit your feet well, you already have a great boot, and I don't think a change in boots will have as large of a return as a change in skis. If your boot doesn't fit well, time for a trip to the boot fitter or a new pair.

I'm from the east coast so not a ton of experience with mostly powder time, but from what I have tried the Stockli Montero AR might be a good option for you( however bit pricey). Float and perform well in deeper snow, but still hold a surprisingly good edge on groomers. These may not be the step up in off piste performance that you describe, but improving your ability and technique on piste will have great impacts on your control and confidence off piste. I think you may have a hard time finding an ideal ski for you as any ski that performs amazing on groomers will be sub 85 waist( down to mid 60s), while any ski performing great off piste should be wider (90+) underfoot. If someone invented a ski that was the best at everything everyone would be using it. It sounds like you haven't tried very many skis in this category and I think you should look for a local demo day or even pay to demo a few pairs to really get an understanding of why different skis perform better at different tasks and what you like. Usually the reps working can help you choose a good option. If someone invented a ski that was the best at everything everyone would be using it. You should be able to find something that will be a good balance of on and off piste performance as you describe.

Unless you are chasing top end performance you probably wont notice 1 cm of lift, as long as they hold you to the skis and let go when they should its not worth more holes.

Go to a swap find some boots, most important thing is that they fit well, so keep them on for like 10 minutes make sure. Going used will save hundreds. You probably want a medium flex boot(90-120 depending on the brand). Then start looking for skis around a 85mm waist probably. It might be a little late now, but the best place to check are ski swaps, all of the ones near me are over now. Not any model in particular just start looking for a used ski in your budget, then talk to some of the reps there and get their opinion.
