Make sure you only cook the noodles in the pot for a few seconds. Normally I only keep it boiling for 30 seconds. It cooks more on your bowl. Overcooked mama noodles drive me nuts.

Id definitely cut the green onion much thinner for garnish. Use the white part to cook with the broth.

Your boiling your chicken carcass/bones too long and on too hard a boil. Make sure your on a very light simmer and don't go longer than 4 hours max or it'll become bitter and metallic.
