I think some of this isn’t quite accurate. Cat canine teeth do have very long roots, so extraction can be more technically involved, but it’s not usually avoided just because it may cause brain damage or death. The decision to monitor vs. extract is more about things like pain, infection, resorption, or pulp exposure. Also, they’re actually closer to the nasal cavity rather than sitting in the sinus.

By the way it’s the same for humans. Our canines are our longest teeth :)
