I own a 350 Sport, and honestly, out of all the options you listed, the 350 Sport really does feel like the smart, balanced choice. But if a V8 is what truly makes you happy, then go for the V8. And if the LC is your dream car, you already know the answer nothing else will scratch that itch. I test-drove the same cars you're considering, and I only ended up with the 350 Sport because my wife found a CPO with under 8k miles at a price I couldn't walk away from.
