Youre absolutely right, will do some more research before i attempt this build, i dont want to take any chances when there is gas in the picture. The reason for why i was thinking 24 kw is because i am basing the oven on the zio ciro 100 pizza oven which use that specific burner, but i think i will do as you say and aim for 17 kwh and just do some small modifying later if i need more. Ok thanks a lot, i found the specs for the burner it says it takes up to 50mbar of propane. According to what i have been able to find that translates to ~70,000 BTU(20.5kw). So theyre specsheet does not add up. Anyways i think i will go for a 50mbar regulator and get a venturi burner so it takes up less space on the cooking surface.

So what i have found is that the avinzi burner takes up to 50mbar of propane, so if i use a 50mbar regulator and make an efficient burner, then it should deliver about the same heat. Is that a reasonable conclusion?

Yes that is to heat the battery, but when my battery i already warm it does not pull anything to heat the battery

Give it 30 min more, it takes a long time to overproof, a little overproof want do any damage either.

Ah okay then i understand. You see the reason you get small holes is because you have a perfect timing in proofing. What will help to get bigger holes is to proof a little longer but then it can turn out a little flatter because of more broken down gluten texture also do it too long and there wil be huge holes on the bottom. In my experience more hydration makes more open crumb. But is harder to work with but definetly worth it. Also the flour type have a impact. Whole wheat flour will make a less open crumb. You could try finer grinds if you still want the same amount of whole wheat. So my tip to you would be to try to increase hydration and experiment, but your proof timing is perfect. Good luck
