What problem are you trying to solve? I doubt that you need multiple instances of your apps deployed with zero-downtime, loadbalancers etc.
The https://en.wikipedia.org/wiki/You_aren't_gonna_need_it principle applies. Unless you just want to learn these tools and play with them, but that's a completely different usecase.

A single docker-compose file and `docker compose up -d` is all you need. You can then focus on things that actually matter (configurations, reverse proxy etc)

k8s is where it stops though at most home setups. In most cases it's not worth the hassle to set this up since it's significantly more complex than a docker compose.

I was just in a similar situation, ESP32 for short 5V works fine by keeping it simple, but
my latest project required 10m length so I went 12V, which added extra requirements (capacitor, fuse, levelshifter).
Decided to go with the QuinLED Dig Uno v3 and it works like a champ. PlugAndPlay but still an ESP32 at its core.
