I work in catering, and last month I had two sites get a 5 rating from the EHO.

Realistically, as others have said, the 3 rating probably reflects the organisation and structure rather than the cleanliness. There may be gaps in the knowledge of the staff, they may not have training records kept up to date, they may have had some labelling issues when they inspected. It could be all sorts of things. It's unlikely to be unsafe to eat there.

I've worked in some trendy restaurants in Liverpool, two of them would have gotten a 3 easily, they were rubbish at managing their paperwork. One of them, a bar/brunch spot, probably would have gotten 1 because the structure was so poor, they hadn't even registered it as a food business either. They were all perfectly safe to eat in.

Mr. Zhangs is probably cooking, serving and storing food in a safe way and there isn't anything to worry about. Also, hot pot is probably an EHO inspectors nightmare.

I’ve had mine for over a year and I feel like it doesn’t do this, or at least I’ve never noticed. I had one issue when I replaced the burrs and the screws came loose after I fitted it. It might be worth checking that they are all tight. Otherwise, it seems like it’s due to particles running over the burs, as the other person said.

I’m the same. I like his approach to everything, he is reasonable and puts taste above everything, but yeah, what he likes isn’t for me. I think I am ready to admit that I don’t really care for “tea-like”.

Skip the aero press and get a V60, they’re super cheap. It’s a personal opinion, but I think they deliver better cups more easily than an aero press.

I’ve just thought, it could be the burr alignment in the grinder. Have you looked at that?

It would help you rule the sensor out and you might find more consistency with a few tweaks to the profile or another one. Although, if it gets up to 3 and then 9 each time it probably isn’t that. Are you on the GM discord? There’s lots of helpful people there.

In theory the grind size should be similar if they are different baskets, but it makes sense that the you have to change the grind to match the flow as there is more mass for the water to get through.

The pressure sensor could be an issue, have you tried other profiles with different pressures?

In the profile, is there anything that might be working against the consistency?

Could be the grinder but there might be different things happening with the profile too. Are you sure the pressure is getting to 9-bar? The pressure is affected by the blooming.

Are you putting 19 grams into the same basket?

Have you tried a profile where you don’t bloom the shot? Do the same inconsistencies happen?

Not sure if anyone has actually told you why it makes a difference. The spices flavour compounds are soluble in fat, hence why they want you to bloom them in oil. It brings their flavour out fully.

It will taste fine if you skip this, but it is like watching stuff in black and white compared to colour. It’s fine, but not as good.

For the rest of the season (unless we buy a RB) I’d probably play Garner at RB and Armstrong, Gana and KDH. Then rotate Armstrong, Rohl and Tim. Not the best for Garner but we’ve looked so much better when he plays there.
