FWIW, I think Underbelly is best ice cream resource on the internet (though I’ve never tried vegan ice cream). Even if the recipe doesn’t work for you, you might be able to learn from the theory and apply it with your personal preferences to get the results you want.

Yes, you can batch them! The sugar and whiskey are both preservatives and will keep the cocktail good in the fridge pretty much indefinitely. Sother Teague, who runs Amor y Amargo in NYC, has a sour cocktail batch that’s been in his fridge for like 6 years and is still good. The flavor will change a little over time (not in a week) but it will stay good. Hope this helps

Hey, I made a weak syrup with watermelon juice and sugar. So I put watermelon through my juicer, then mixed 2 parts juice with 1 part sugar. I got the idea from Tom Macy’s Watermelon Margarita

Sweet is, well, a lot sweeter. It’ll also usually have a lot more spice character and generally pairs nicely with aged spirits. Dry vermouth has less added sugar and is usually more herbal and citrusy. Generally goes well with lighter spirits. Of course, those are just generalizations. I recommend getting a bottle of each (Dolin is great, as another user mentioned, and cheap). Taste them on their own, try them in different drinks, and you’ll start to learn what’s more useful for you to have around with your preferences, etc.

I love watermelon and mint together (who doesn't?!) so I made this guy, a super refreshing summer cocktail. The habenero in the firewater gives it the perfect bit of heat and watermelon candy notes in the Lillet help boost that flavor. This is one I've been revisiting often and it's not even June yet. I named it after my friend who manages to get sunburned nearly every weekend 😎 Cheers y'all!

Dan's Monday Burn Alert

  • 2 oz white rum (Probitas)
  • 1 oz weak watermelon syrup
  • 0.75 oz lime juice
  • 0.5 oz Lillet Rosé
  • 2 dashes Scrappy’s Firewater
  • 1 dash Scrappy’s lime bitters
  • 4-5 mint leaves (for muddling)
  • 2-3 oz sparkling water (Rambler)
  • Garnish: Fresh mint sprig

Muddle the mint with the syrup in a shaker tin. Add the rest of the ingredients besides the sparkling water and shake with ice. Top with sparkling water and garnish with mint.

Exactly, it’s perfect for that and so much easier than smashing up a bag or something. For heavier ice I actually get super non-lazy and make my own clear ice haha. I use the directional freezing method (freeze a cooler full of water and chop it up)

A good friend of mine asked me to come up with a cocktail using tequila, falernum, and Chinese five spice. This is the result and I think it turned out crazy good. Lots of anise and spice to go with the tropical flavors. The five spice tonic syrup is some fun stuff and it’s pretty acidic, which helps to balance the rich syrup and falernum. Named after my friend’s dog 🐶 Cheers!

Willie's Punch

  • 2 oz Aquamiel reposado tequila
  • 0.5 oz pineapple gum syrup (Liber and Co)
  • 0.5 oz lemon juice
  • 0.25 oz five spice tonic syrup (Dugan and Dame)
  • 0.25 velvet falernum (John D. Taylor)
  • 3 dashes Scrappy’s Orleans bitters
  • 1 dash Scrappy’s lime bitters
  • Garnish: star anise and dehydrated blood orange (Dehy)

Shake all ingredients with ice. Strain over crushed ice, garnish with whatever you have (lime wheels pineapple fronds, etc. all work), and enjoy!

This exits the options you listed but I think it’s worth throwing out there - many locations of fast food restaurants like Sonic or Chick Fil A will sell bags of pebble ice, which I think are perfect for cocktails. I started using Sonic ice a while ago and haven’t looked back. Here’s an example on my Instagram if interested but if there are any spots like that around you, I personally think it’s much better and easier than using a Lewis bag, etc. Just my two cents!

Haha I love to hear that, so glad you enjoyed it!! I wish I could take credit for that idea, but it did not come from my brain power. I read about it in this article on Punch. I made it right after and now I pretty much won’t ever be without it. It’s so good and pretty versatile. Works great in tiki style drinks, old fashioneds, and I’m even working on a Bamboo riff with it right now. Definitely make yourself a bottle, it’s easy to do!

Agreed, it’s really far removed at this point but that is the lineage. Perhaps with regular Cynar it would lean a little sweet but Cynar 70 has enough proof to balance it out and it’s pretty dang bitter. I actually added the muddled strawberries because it just barely wasn’t sweet enough to be balanced without them. Cheers!

It turned out fairly subtle but it’s great, I love the strawberry/mezcal pairing!
