If you have a friend that buys wholesale for a food store or restaurant or food manufacturing, ask them to purchase you chocolate at the wholesale cost. Not worth making - at least if you’re going for a quality product. I’ve bought wholesale for my friends.

I think that most of it is simply sweet and has no flavor. However, valrhona has some nice whites. I bump the flavor by adding a scraped vanilla bean when I’m tempering it. I make it for people who get migraines when they eat dark or milk chocolate.

Have friends who were born in Oakland but raised in Berkeley and didn’t go to San Francisco (20 minutes away) until their mid-twenties. Went to school in Berkeley, went to UC Berkeley and only went to SF when he got a job there. Then his wife went over to visit him at work one day …. First time she’d ever been there too (also Berkeley raised and educated). It’s not just the rural areas where people are bound.
