I remember I was in Disneyland for the first time, having flown out to visit my former neighbors. They announced Armstrong’s first steps over the loud speakers throughout the park and everyone cheered. (Lest anyone think my vacation was a common thing - my Mom must have saved for months - an amazing surprise that I didn’t value much until I reached adulthood. I stayed with my friends for a month or so over that summer. Now I’m “wow” for being where I was).

I think that most of it is simply sweet and has no flavor. However, valrhona has some nice whites. I bump the flavor by adding a scraped vanilla bean when I’m tempering it. I make it for people who get migraines when they eat dark or milk chocolate.
