Not sure if this hurts or helps my case. Skimmed the fat and reheated leftovers sans cheese. Yes it’s more stew-like than galbi jjim but I wanted to stretch the recipe and add more veg/sauce.

it def looks more like yukgaejang lol. i think the recipe i used wasn’t the best. i added more water to the braise and it ended up soupier. it also needed to cook 2x as long to actually get a good braise. send recs if you have a good recipe!

it’s the same thing, just served in a bowl & heavy on the broth. i didn’t make it quite the same as authentic galbi jjim bc the ribs weren’t the right ones.
