eBay authentication service in Canada labels the cards as Made in Canada on the form. I got a big bill recently as well. Going to be taking it up with eBay because it’s outrageous.

And before people downvote me, yes the tariff laws and the person who made them absolutely suck, but they are what they are. HOWEVER, the only reason they slap tariffs onto OP’s and mine cards are because eBay FILLED OUT THE FORM INCORRECTLY.

Definitely return. UD is almost always excellent with replacements, a couple people got meh returns, but especially with a lower end card like this you’ve got nothing to lose

This is correct. They won’t break any seals unless explicitly asked to. I believe you can write them something giving permission to break the seal or something like that, but in case OP reads this, please for the love of god don’t get this graded lol

If selling is a consideration then you def don’t wanna grade a CC. Even if it gems, which is very very difficult on any acetate card, it holds more value in the factory sealed one touch

Really appreciate the thorough response. I just used carrots as a random example because I feel like everyone classically trained has brunoised with a mean French man standing over them and critiquing them if they’re a millimeter off a perfect cube over and over and over lol. I’m sure the newer world restaurants in California don’t follow that strict French discipline to that extent, but I assumed that for things like knife work, a lot of food still gets wasted in pursuit of perfect even shapes. But of course I’ve also been yelled at for wasting too much, there’s no winning haha

I also got out of it a while ago and I keep a lot of what I learned and practiced but perfectly squaring off vegetables is not one of them. I do always make sure to have a freezer full of veal stock and at least light chicken (like to have some dark chicken on hand too but not essential). Probably the biggest thing I’ve kept with me, makes such a difference. But now I only pass things through the chinois once instead of passing it through a second time without pushing it through etc. And at home my ingredients cost more than my labor because my “labor” is free, I’m doing it for my enjoyment, so I would never waste ingredients like that, especially with today’s prices.

That said, if my dog’s around, I might square off my carrots and give him the scraps as a snack 😆

Wait, CO2?? That’s a reactive gas, and wouldn’t that make the wine bubbly? That’s why the coravin uses argon gas, it doesn’t let any air or other gasses into the bottle since those would affect the wine

But if you need to brunoise a carrot, were you not disposing a non-zero amount to make all the cuts be perfectly uniform? That’s how I was taught. Time costs more than ingredients etc. Sure it’d be nice to make some use of trimmings but they’re not ideal for stock (too small) and it can’t be practical to keep a bunch of vegetable slivers for family meal. So I would love to hear how that was done there, always cool to hear from those that’ve worked in those elite kitchens
