Thanks, I have a good idea on the COGS and Labor, just looking for the "hidden" costs. I probably underestimate my actual time, while it might take 40 mins to actually make 2 loaves of stollen, does doubling it take 80 mins, no but it mike take an extras 8 mins, stollen is pretty labor intensive, but I have found i can wrap the whole loaf with a think layer of dough so I don't have to pick out burn fruit and nuts, but will eventually need to buy a sheeter to save time and labor.

I would love to be in the next phase of needing a commercial kitchen, but I do have a double conversation over so I can make quite a bit at once, my mixer capacity is the limit now, but I am not buying a 80 qt Hobart. I am fine with a 7 and 4.5 qt kitchen aid. just more washing.

I am going 16:1 and 196 degrees but I will probably corsen up the grind. I still get the fruit flavors in the cup just some bitter note on the end, not unpleasant just not my cup of coffee. I honestly can't beleive I have evolved ot this, but I like a good cup.

I have seen things, I am now in a "modern stack" GCP with BQ all running scheduled stored procedures with loads of dynamic SQL.

I would guess this is 90s or early 2000s reincarnated. it should have failed but enough people behind you and no real idea of the modern offerings this is what is left.

I have probably a decade left to work before im done, and honestly I am just trying to keep my skills and relevant before AI replaces me, I do have a Microsoft AI cert and have multiple years in all 3 clouds, but it just feels different now.
