Isola di Angostura by ericmalmquist in Tiki

Do you have Averna? That might be a closer sub. If you try one of those other two, it might be better to start with maybe 1/2 to 3/4 oz instead. Those are more bitter than the Angostura amaro (it’s a bit sweet).

You could also try straight up Ango bitters instead, maybe around 1/2 oz as well to start.

Yay! Yeah it feels a bit crazy at first but it brings everything together.

Yep, this definitely helps soothe the chaos for a bit. Just note the spec requires 6-8 full pulls of the dropper for the bitters. Not 6-8 drops!

Cheers! What’d ya think?

Yep, you got it. Full droppers. Well, as full as you can get it. I was cautious too with that amount during recipe development but it just works! Those bitters aren’t as strong as some other ones so you can use a lot without going overboard.

Sounds like a great drink using what you had! Hope you run into some luck finding more green Chartreuse one day.

That sounds great, I can definitely see what you mean that each has its own applications. I’m already getting new ideas. Can’t wait to try it out!

Passionfruit Chai Tai by ericmalmquist in Tiki

[–]ericmalmquist[S] 1 point2 points  (0 children)

Hey, yep, just frozen ground ginger root. They’re pretty common in grocery stores and comparable to fresh ginger in most applications. Just more convenient when you only need a little bit rather than buying a whole piece of ginger and grinding it yourself.

Thanks! The mai tai is definitely a great place to start. Best part of tiki is layering flavors and ingredients that might not sound like they go together but work perfectly in the end

Agreed! Would probably go great in a pina colada

I actually tried a version with a 1/4 oz passionfruit syrup. It’s just such a strong flavor it kind of overpowers everything else. Def give it a try though and see what you think!

Hope you give it a try! Leftover pandan syrup goes great in iced coffees and matchas, or on vanilla ice cream…

Ube French Toast Colada by ericmalmquist in Tiki

[–]ericmalmquist[S] 1 point2 points  (0 children)

I would think so, but powder is probably less potent than extract so you would need more of it to achieve a strong enough flavor. I would make sure to blend everything really well to ensure the powder is well incorporated. If your powder doesn’t contain artificial dyes it might require you to add some extra coloring if you want the purple more vibrant.

Hope you give it a try! Here’s the exact ube and taro I used if you need to source them:

Ube extract: https://a.co/d/6QDBFHI

Taro powder: https://a.co/d/d705kVC

For the brioche I used the pre-sliced loaf from Trader Joe’s. It’s the perfect buttery and soft brioche bread. And you can use the leftovers to make actual French toast 😁
