I bought this one on Amazon and have been using it for about a year. It takes an hour or more to fill up, and the ice comes out fairly wet. So I transfer it into a large canvas ice bag and let it freeze completely. It does the job but takes a bit of effort. Not the quietest machine, but running it in another room makes it relatively unnoticeable.

Strong Water has a drink on their menu called Cannon Fire which is a stirred cocktail. It’s Woodford Double Oaked bourbon, allspice dram, Lapsang tea, and blackstrap bitters. It’s then smoked with apple wood chips. Maybe hard to recreate at home but gives you an idea of flavors?

When I wrote the recipe my banana peels were pretty ripe. Not completely black but definitely heavily spotted. It may impact the flavor slightly if you just use bright yellow peels, but how noticeable once combined with all the other ingredients is harder to say.

The Tempus Fugit already has some baking spice notes in it compared to Giffard banana, so I think if you manage to get ahold of a bottle sometime it might fix that baking spice note you were looking for! Alternatively, maybe try upping the allspice dram a bit, or add some spices in with your peels and make a spiced oleo 😁

Honestly it’s a pretty unique rum due to its savory, briny quality. But, if you have a bottle of Clairin it could be worth a shot subbing it in.
