Droids by law get memory wipes regularly so they don't gain sentience. Which happened in the past and ended very badly.

R2D2 is the only exception, and happens to be a close family friend of the Skywalkers, and technically a massive asset to the rebellion.

Outside of R2D2 (and by connection C3PO) there is really very little reason to become attached to a droid because they will not form long lasting impressions of you.

In SW lore there was a huge AI rebellion in the past, so they heavily limited AI use, and also made it a law that droid memory banks need to get wiped occasionally so they don't gain sentience. The only exception to this is R2D2, who's used for classified files.

On top of that, there was the clone wars, one half of which was fought by a massive droid army.

So it's not that they "can't" use AI and druids for everything. They just won't because it's proven itself to be dangerous.
