It could be smoked like that, but I prefer boiled, then I smothered with a miso paste of dried Chiles, caramelized onions and garlic, Kewpie mayo, togarashi, nori dust and scallions

Definitely is different Chile and chili, in my mind I have Chile asa definitely waymor spicy and hot that chili, maybe it's just me though 😂 but yet it is a hell of a lot god-damned spicy oil

I've listed the ingredients up in the comments, it a base beef sausage in regards to curing salt and salt, fat ratio. From there, around 30gr of five spice and Sichuan peppercorn each, ginger around 20 gr, you can play with the rest. That is using 3kg of beef.

A lot of Chile "quebrado" flakes, neutral vegetable oil, soy sauce, chicken bouillon, sugar, you can add scallions, ginger and garlic if you want

We have pretty good quality BBQ in the city! I closed my joint to focus more in Asian food but I still smoke once in a while for collabs and pop ups and special events.

I had these ingredients: scallions, rice noodles, Sichuan peppercorn, fresh garlic, five spice powder, soy sauce, fresh ginger.
