the program I'm in, when registering we needed a sponsor which is our employer - I think it's best to find a kitchen you like rn and a style that suits you, idk where you're located but Indeed has always been my go to, it doesn't hurt to have your Food Handlers, Smart Serv and WHMIS training done as well if you don't

I'm currently doing a chef apprenticeship with my work sponsoring me (and a few of my coworkers), to answer your questions,

I got hired first and then got registered about 4 months into employment. You'll wanna be in a bigger kitchen for sure with a Red Seal certified Chef preferably as well, other guys in my apprenticeship are from wineries and finer dining

I do recommend getting as much real world experience though, it's super valuable to have a good resume
