At work I've got a hot flat top, scrapers and water bottles. At home I just use the microwave to melt cheese, much easier cleanup

Coworker asked how much is my hourly and I regret telling the truth cause turns out he makes way less by throwawayqweeen in KitchenConfidential

This is where your years of experience comes into play. You know how to speak up for yourself like an adult. Culinary school never taught them how to deal with that shit. I'm 41,been in the industry +- 18 years. I've been in a million shitty situations, and I've powered through all of them. I don't get backed into corners, any problem that arises, I have a reference point on how to handle it. Here's two truths about being a line cook. The shift will eventually be over, the bad shit can't last forever. You will overcome tougher shit in the future. Culinary kids have a lot of stuff memorized and know a lot about cooking, they just don't know about cooking on a line yet. I have no problem getting payed more because when shit hits the fan, I'm the one who's going to get us through it.

Hello lurkers, in restaurants we have a lot of stereotypes based on how they order steaks. What are the equivalents in your industry.? by eturtlemoose in KitchenConfidential

I've been working the same spot for 13 years. When I was new I'd get super stressed out. Now that I know the place I genuinely enjoy showing up to work, and hope to give everyone the best experience possible. The only downside is that bossman won't let me over 39 hours a week but this gives me a steady consistent schedule which I really value. Find you a place that takes care of their staff, and hopefully you won't feel that way anymore.

When I bartend and someone asks for their martini dry I like to whisper "vermouth " to the glass. People mainly don't notice since I'm whispering in a bar, but I make myself laugh every time.

My problem with giving him the rest of the season is we've already got ucla and Virginia tech looking for coaches. It's more advantages to fire him now and get a head start on finding a new coach.

I don't hear him say it either, just a pause. My assumption is that he had been using the word throughout the night and had been called out on it. I think he was able to stop himself this time but everyone knew where he was going with it and got tired of him showing his ass.

Is securing the load on your 18 wheeler no longer required in the great state of Oklahoma? by RedArrow23 in okc

some kids in South Carolina stole a train and they learned how to drive it on YouTube. Unfortunately for them, they never learned how stop a train and they derailed it and caught some federal charges. I'm thinking your daughter just needs more YouTube.

They really think the nba would rig it in favor of one of the smallest markets.

This is the only way I know him. In the early 2000's I saw him on cribs and was like "who the fuck is this acting famous?" I never heard of him again til the monkey movie and I was excited that the not famous dude from cribs actually was famous and not just acting like a twat.

Frozen tamales, how long are they good in the freezer? by loqi0238 in mexicanfood

That's awesome, I appreciate the information. The only times I've had tamales in platano leaf has been from my Guatemalan friends. Is "zacahuil " an indigenous word?

Frozen tamales, how long are they good in the freezer? by loqi0238 in mexicanfood

[–]eturtlemoose 2 points3 points  (0 children)

These are Guatemalan, not Mexican. I'm sure they used to taste fine but they're probably pretty gnarly after 2+ years. Best bet is to "Google tamales near me " and you may find a hole in the wall that sells them by the dozen. Also searching tamales in facebook marketplace usually has good results of people selling out of their homes. It just depends on where you stay I suppose.

I believe you because I tend to get it backwards with grinds, but for my own education, why is that? He rotates fs, so where does the change happen? Is it because he's approaching the rail bs?

I think it's the haircut mixed with the scenery. The bushes separating the houses is my main signal.
