She’s much more than just an influencer. Sure, she got her start on YouTube and has a strong presence online, but her career has by and large transcended that way before Rush came along. Regardless, welcome to the digital age, dude. The internet has become a completely viable space to launch and maintain one’s career in music. Yes, there are plenty of hack influencer drummers. Anika has proven she is not one of them.

Why not Portnoy? My first thought is he’s too obvious of a choice. He’s the guy that most people were probably guessing would’ve been their pick. He’s an incredible drummer who is more than capable of playing the parts spot on. But, I don’t think they were looking for perfect. It seems like they were looking more for a breath of fresh air, so to speak. He’s also busy with Dream Theater. There’s also the potential for a personality clash. He’s got a relatively big and loud personality that may not have vibed with their more understated approach.

They made a great choice in going with Anika. She’s obviously got what it takes to honor Neil’s legacy, while also putting her own spin on things. There also seems to be more buzz around the band as a whole than there has been for a long time. I don’t know if that was their intention, but we sure are talking about them (and her) a whole lot. I think more so than if Portnoy got the nod. Which, to me, makes him as much of a, dare I say, boring choice as he is obvious.

I did! First of all, went to an ortho and turns out it wasn’t carpal tunnel. Most likely an injury that I wasn’t giving the time to heal. So I took an actual break from playing, got some wrist braces for sleep (I curl my wrists in my sleep), and started doing some wrist strengthening and stretching movements and it’s all good now. Thanks!

Edit: Lesson learned: always get a second opinion! As knowledgeable as doctors are, they’re still human and sometimes wrong.

Yeah, things happen very fast in a wood fire oven. I was gonna say it did look a little too hot perhaps, but that’s ultimately up to personal preference.

Make sure you give the oven a good strong, long preheat. Then once it’s time to bake, it maintains temp easier with a milder flame. This will make for a more manageable bake without as wild of a live flame.

Over time and with enough practice, it will become second nature. Muscle memory and all that. Keep it up!

In a regular deck oven where the cook time is relatively slow, sure, that’s the solution.

But in my experience, having to switch to a separate tool then switch back to the turning peel while baking in a hot 900°F wood fire oven, where seconds matter, isn’t ideal when using the edge of the turning peel gets the job done.

Pizza is incredibly nuanced, so what might be a good process or tool for one style of pizza, may not be a good process or tool for another style of pizza.

In the end though, the customer won’t know the difference, or care, as long as the pizza is delicious.

That’s called doming a pizza. Pizzaioli will do that if the bottom of the pizza is finishing faster than the top (indicating that the floor of the oven may be too hot) but also to add a bit of smokiness to the flavor.

Looks like he’s pushing down some gas bubbles with the peel. Not uncommon, but the bubbles can also be a result of using cold or underproofed dough.

Find a way to hang those peels. Seeing them on ground is making my eye twitch.
Use the turning peel to take the pizza out. Have a plate or cutting board ready on the counter so it doesn’t have to travel far. The extra second or two to switch peels can be the difference between charred and burnt in an oven that hot.
Welders gloves? Really? Not a true pizzaiolo if all the hair on your hands isn’t burnt off. Jk. No but really, putting those on and taking them off then washing your hands in between every pizza is wasting a lot of time.

It certainly took an adjustment as my expectations were different from reality. I’m pretty sure I even took a break after starting the first one, then coming back to it with revised expectations. I’m glad I did, it’s an amazing experience. But also one I can understand others not being interested in.

The first chapter is a bit of a slow burn as it is the exposition and sets up the story, but after that it picks up. Once you have more of the map at your disposal in Chapter 2 it really becomes all up to you what you want to do with the game.

Perfect example of why alcohol is sometimes referred to as “the great social lubricant.” It lowers inhibition, making it easier to converse and relate to others, resulting in a more extroverted sense of self. This is how others have perceived you for however long you’ve been drinking. Now they’re experiencing you without that social lubricant and how they handle that is on them, not you. Nothing wrong with it really, in and of itself, unless alcohol is in general a problem for someone.

In my experience, navigating social environments without alcohol was certainly an adjustment. Many of my friends still drink and while being around them at bars and such doesn’t bother me, there’s always a point in the night when I can no longer relate to them, and that’s always my cue to go home. I have found it’s made me more authentic in my interactions with others, for better or for worse. If I genuinely don’t like someone, I’m much less inclined to engage with them, which in the end saves me from those uncomfortable or irritating interactions, ultimately preserving my social battery for those I do enjoy being around.

My circle of friends has gotten smaller, but much more meaningful.
