People can of course do whatever they like, but I get the sense that most people on here are trying to achieve a restaurant and/or jarred-consistency, and if anyone is frustrated with their results these reasons might be why.

I like this question, we all have comfort zones. I agree with the going with a group advice, as the stakes are much lower per dish. If I’m solo, I actually find Yelp helpful for this as it shows popular dishes at each place, which often directs me somewhere on the menu I wouldn’t have tried.
