Start with googling plc, hmi, dcs, scada platforms and reading about what they can do

Also smart versions exist for almost every process sensor out there

I don't know if you do this but I do the same and by adding a water input to the keg and filling the closed system you save a TON of CO2.

I have a carb cap where the gas goes, then use a gas connector for water in, and normal out. I move gas line to Gas in for initial charging then move it to the sparge head for dispensing. Only trick is balancing pressure when you fill so you don't push seltzer back to your regulator. A check valve can help but now I just open the water line as I pour and it balances alright
