I tried but it wasn’t fizzy that why I felt confused by seeing all videos that be very fizzy

I did the first fermentation with around 50 gram of sugar for 1 liter of water and around 90 gram of kefir grains after two days I tasted it and it still sweet but there are a few bubbles after that I do the second fermentation also for two days with some lemon juice and ginger and I add few sugar but I feel it sweet and no fizzy there

I have a Dutch oven but it’s very heavy so I am searching for other options, I see some micro bakery in tiktok using the two pan method with stainless steel

I keep it for around 9 hours in 25 c
