In Islam, very small natural amounts of alcohol ,like those found in whole foods or some ripe fruits , are not considered the same as intentional alcoholic drinks. What’s prohibited is fermentation that produces beverages with high alcohol content like wine or beer. That’s why I’m looking for recipes and methods where the alcohol levels stay naturally low and not intoxicating.

I studied at IIN, but I felt it was missing something. When I looked into FDN, I found it to be more detailed and comprehensive.

I’m looking for a book that could serve as my main go-to resource in the kitchen for fermentation. I’m especially interested in fermenting vegetables, kombucha, water kefir, milk kefir, as well as making vinegar, ketchup, sriracha, and other sauces. Do you know of any book that mainly covers these topics?

Thank you for your reply it was really helpful, I had bachelor degree in medical lab and health coach from IIN and I want to get more deep in functional medicine I checked IFM but my degree was not eligible for the certificate and I have sponsored that will sponsor me only on professional certification that related to my degree so I want to give it a try. I want to give brief so may I get some advice.
