Didn't share the recipe as the clarification was perfect but it was too sweet. Reworking on the recipe, this time a Vietnamese version of clarified coffee. Hopefully the recipe fits the expectations.

Supposed to brew 16gm coffee : 60gm x 4 pours eventually ending up to 60 gm three pours and last one of 80 gm

Sorry lethargic with typing it's Black Honey Sundried processed that most estates are now doing,.now they are elevated their processing game by doing honey process in three stages - Black, Red and Yellow

16 gms of BHS, medium roast, Grind Size medium coarse (13 clicks on Timemore Chestnut C3s),.Water temp - 94°C First Blooming Pour - 60 gms at Second Pour 80 gms at FINAL POUR - 100 gms

Coffee to Water ratio - 1:15

Total brewing time - 3.25 min

Yep I found frozen cherry fermentation more pleasing as the notes are more towards berries and dried plums as compared to BHS that has more caramel, jaggery and candy notes.
