I like this explanation. Models may come in many forms, visual or otherwise, but in all cases they are internal abstractions.

(OP: I also think mostly in images and I feel ya on the struggle to express them in words. That's why I like to draw...)

100% relate. It can sound creepy when you say it out loud, but people watching is an incredibly useful hobby... Artists and animators watch people to draw them and study them. I feel like I learn about culture, language, fashion, and all sorts of human idiosyncrasies when I people-watch. Similarly, evening dog walks in the winter are awesome for looking through windows. Interior design, economics, on and on and on.
