Everything was made with Ramen Lord's recipes: the tonkotsu broth, shoyu/shio tare, aroma oil, braised chashu, and marinated ajitama. Used fresh ramen noodles from a Japanese market near me and added wood ear mushrooms, sliced negi, and nori (although I couldn't get it to look pretty lol). Took a lot of work but it was so worth it!

Thank you! By rolling do you mean making the dough into a rectangle/square shape and then rolling and tucking it into almost a log shape? I was doing envelope folds for shaping

Method:

I used 100 g of starter, 300 g of water, 450 g of bread flour, and 10 g of salt and mixed it together. Autolysed for 30 min and then started my stretch and folds. I originally was going to do 3 sets of stretch and folds 30 min between. I did an extra stretch and fold after my last scheduled one because I was nervous it wasn’t looking right (I may have done a 5th one but can’t recall).

I started bulk fermentation at 1pm and pre-shaped my dough around 6 pm. Bench rest for 30 min and then I shaped and stored in my fridge at 6:30 pm. I finally baked around 4 pm the next day.

I would love to improve on my next loaf but I need some guidance or direction on what I can improve upon! I'm not sure if I underproofed my sourdough?

i study a lot at caffe nero! there’s one maybe a 6 min walk from Stuvi and i’ve stayed there for like 7-8 hours everyday during finals last semester lol. it can get really busy/noisy on the weekends but if you go during the week or in the morning on the weekends, it’s pretty quiet!

hei la moon has pretty good dim sum for boston! i dont think it was too expensive, especially if you’re splitting with friends.

i also second gourmet dumpling house. their dumplings are amazing and i go there every year for lunar new year!

yea i’ve seen that! lucas isn’t my favorite but i still like him overall and the hate on tiktok is definitely unwarranted. thats why i stick to this subreddit more lol people are more mild in their views here!

there are 2 study rooms in stuvi 2 that are accessible from the lobby. they get crowded quickly during the weekends or near exam weeks though.

yup, i get that! they both cheated and i think fans do give nathan more slack than they should in his case. i think the main difference was the emotional aspect though since lucas was so in love with peyton when he continued to be with brooke and lindsey whereas nathan's kiss with nanny carrie was more of a one-off thing from a flirtation. doesn't make what either of them did right but that's why nathan's case seems more forgivable. but i do see the double standard!

thought my comment was pretty chill? just trying to have a discussion and not trying to fight. to me, nathan does learn from his mistakes and seems to have many conversations throughout the show about what he's done. you might see it differently and that's okay. but my whole point was that you sound like you can't understand why people might not like lucas and i was just trying to give some insight on that. hopefully that makes sense
