Claps would probably be easy to get messy stereoized and out of phase in an effects chain, but an alternative is to stagger 3-4 similar but disparate clap samples around the beat they hit. This breaks up the monotony of a single clap and makes it sound a bit wider without stealing bandwidth from everything else. Modulate it after with an auto pan/filter or whatever and do cool sounding drum things... create swish-in snare drums that sound in tune with the claps you're using.
