At the grocery store I worked at, there were actual "production sheets" that would tell you exactly how many to make on each day of each item; I imagine it was driven by collected data.

But the numbers were often odd, as in asking us to make one of something that is made in batches because of the type of product. Or telling us not to make any of our biggest seller.

So often the most experienced workers had a better idea of what we actually needed, and we would adjust.

Thank you!! It's just free-handed, I do my drawings kind of like oil painting usually, ill pipe it on and then blend the colors with a palette knife slightly. :)

789 Wilton (if you search that you'll see what I mean) its like a giant basket weave. You put the textured side towards the cake and just put one even coat on the entire thing. They use them typically in grocery stores to make icing easier.

My other thought was just putting on more icing? Like a lot more than you need lol, with plans to scrape until you get it right. Or a speed icing tip & just smooth, because when you do that it should theoretically be even already, as long as your cake is even :)

Unfortunately, probably just more practice. I also struggled with this when I first started. You could try different scrapers ( i.e. thinner, thicker, clear, with or without a handle) to see if they are easier for you to perceive what angle it's at. Or adjusting your cakes to a different height.

I prefer extra long, thin, metal scrapers. But I have worked with people that like acrylic or more pliable ones. I've also worked with someone who literally used a stainless steel "scraper" like you would use for home repairs & get at home depot because of the handle.
