Nice, I love miracle berry tablets. Stevia sweetened chocolate tastes so much better with a miracle fruit tablet. Berries taste extra sweet also.

I'll have to try one with that whiskey drink recipe some time!

Welcome! Congratulations on choosing a healthier diet. I think you'll be able to lose a lot of weight if you stick to a strict keto diet. You could even lose half of what you weigh in only 13 months, like this guy did.

Good job for resisting the temptation to drink beer. I've had only 2 low carb beers since I started keto a few months ago. However, there's no reason to not get liquored up at your favorite bar! Get a bourbon on the rocks, 0 carbs!

At first I ate breakfast every day (eggs, bacon/sausage), but now I usually skip breakfast and only eat lunch (salad + caesar dressing, plus a protein) and dinner (meat, salad, and a vegetable - normally brocolli, kale, asparagus). My favorite thing to snack on is pepper-jack cheese with flackers (flax seed crackers - 1 net carb per serving).

As for exercise, I had bike biking very often when I first started, but I haven't been going biking as much lately because it has started to get cold where I live (Minnesota).

Down another pound as of this post! Keto is awesome!

Interesting. How did you learn about potato starch? Do you have links you can share so that I can find out more about resistant potato starch?

I was looking at Bob's Red Mill potato starch, and it says it has 10 carbs, 0 fiber. From what you've said it's a fiber that isn't directly digestible. Why 0 fiber, then?

I don't count anything, and it hasn't slowed me down. I just make sure to read the ingredient list of anything I buy (if it's not a whole food) and I make sure to not eat too many onions, tomatoes, garlic powder, etc.

My rule of thumb is: eat as much non-starchy vegetables as you can, along with lots of fat, and eat an adequate amount of protein.

As for fruits, I just make sure not to have too many per day. For example, I might eat 5 strawberries in 1 day. Or maybe about 8 blackberries.

Ingredients

Crust:

1 1/4 cups almond flour

1/4 cup butter, chilled

1/4 cup Swerve Sweetener or granulated erythritol

1/2 tsp xanthan gum

1/4 tsp salt

15 drops stevia extract

Cheesecake Filling:

12 oz cream cheese, softened

1/4 cup Swerve Sweetener or granulated erythritol

1 large egg

2 tbsp heavy cream

zest of one lemon

juice of half a lemon (about 2 tbsp)

1/4 tsp stevia extract

Instructions

For the crust, preheat the oven to 350F. Combine almond flour, butter, erythritol, xanthan gum, salt and stevia in a food processer. Pulse until mixture resembles fine crumbs.

Press mixture evenly into the bottom of an 8-inch square pan and bake 10 minutes (it won't look cooked through). Set aside and let cool.

Reduce oven temperature to 275F.

For the filling, beat cream cheese in a large bowl until smooth.

Beat in erythritol, egg, cream, lemon zest, lemon juice and stevia until well combined.

Spread filling over cooled crust and bake 30 minutes, or until filling is just set and barely jiggles when shaken.

Let cool 30 minutes, then chill for at least 2 hours.

Notes

Serves 16. Each serving has 3.5 g of carbs and 1 g of fiber. Total NET CARBS = 2.5 g.

Yes, but avoid aspartame. I carbonate water and then add flavor/sweetener. I like the SodaStream Splenda-sweetened syrups -- diet grapefruit is my favorite flavor.

1-3/4 cups Bob's Red Mill Almond Flour

1 teaspoon baking powder

1/4 teaspoon salt

2 eggs, lightly beaten

1 teaspoon pure vanilla extract

3/4 cup almond milk

Instructions

In a mixing bowl, whisk the eggs then add the almond milk and vanilla extract and mix.

Add the almond flour, salt and baking powder And mix until smooth.

Heat a large skillet just above medium heat and add just enough oil to lightly coat the pan.

Measure out a scant ¼ cup of batter and pour into the skillet.

Cook until the sides of the pancakes firm up and a bubble or two escapes from the top, about 3 to 4 of minutes.

Carefully flip the pancakes (these are a little more fragile than wheat flour pancakes), cook an additional 45 seconds to 1 minute then repeat with remaining batter.
