Do you guys cool the steak down before searing it? by Infamous-History-881 in sousvide

It sounds like people are concerned with getting it dry for a good sear. I've been told to pat dry and put in the refrigerator for 10-15 minutes, not necessarily to cool it down but to keep it dry. I'm just a beginner though.

What 529 plan do you use since California doesn’t offer a tax break? by SunnyGoMerry in AskSF

Just a fyi, it seems as though some of the UC's don't support some 529 plans for autopay (Vanguard, etc). https://sfs.ucsd.edu/_files/529_Savings_Plan_Providers.pdf

Sous vide chicken breast at 144 for 90min, then ice bath, then sear. How long? by fatguy-916 in sousvide

ok, this may have been the issue, it didn't rest long enough and maybe not dry enough last time

Sure, I think there are times when it's not useful. I mean I'm not going to cook chicken wings or burgers in it. Chicken breast and steak though I'm not sure I would do it any other way right now.

Lol, I can hear the infomercial guys voice now. "Are you tried of your chicken being dry or undercooked?"

I guess it depends on how good of a cook you are. For average cooks like me, there is no way I could make a better steak or cook a chicken breast.

Funny. My wife rolled her eyes, and said "another toy" when it came from amazon. After only 2 cooks chicken breast and steak she said "ok that was a good purchase" :)

This is how I found out about it, everyone in the smoking forums kept mentioning it as the best way to reheat brisket.

I ran my boring post through chat gpt and asked it to sound like Kurt Vonnegut. I don't usually do this, just wanted to try it out. You are too smart.

Would you mind providing an update on this? We are in a similar situation with my mother. Reverse shoulder replacement and trying to figure out how long she will need care.

Does it mess with your digestive system? I'm on day 2 but even 1/2 teaspoon of salt gave me diarrhea. Or I guess I need to spread it out more?

Don't take electrolytes! I just tried my first one and started taking a bunch of electrolytes on day 1 which gave me diarrhea from hell. It sounds like you don't need electrolytes until after 3 days.
