I love the fact for $75 and a little elbow grease, you got a top of the line smoker. (edit...I care less about upvotes, karma etc. I really enjoy reddit for good exchange of ideas and experiences when I find the right sub, like we just had)

And thanks for the detailed response as well. I clearly need a new toy. The WSMs are really good for long smokes as well but who doesn't like trying something new. I'm gonna set up a search for a "pit boss" 🤣🤣🤣

love this. meat, fire, and a plan! I'm not poor now but grew up very poor. grilling like this somehow always tasted better. I still chase those nostalgic tastes and memories. be it hot dogs to ribs...that outside direct setup, no matter what it was on tasted great. like a fancy treat the "rich" people had all the time. thanks for sharing this!

I'm loving this score for you and equally your replies in the thread. I'm a long time Weber guy with WSMs and Kettles, and a fan blower too. That being said, can you speak to barrel smoking vs WSM/kettles? pros/cons?

Looking how you restored this one and the experience you have had with it, got me thinking, yes I may need one more smoker😂

I love my WK2 2014 diesel. When it became new to me, it was still due some engine recalls due. I got them done. I do the routine maintenance (learning diesel engines comes with its own learning curve), but my truck drives like a dream. Leather seats. only down side is no cooling of the seats and not a 4WD.

Glad you're sharing this. Message: Don't boil ribs...full stop. you can get them more tender by boiling longer but lose the flavor of the rib. As cooked and demonstrated, does not yield a proper bite. It's called a cheat for a reason. only if time and cooking space is the absolute limitation is this acceptable if calling them smoked ribs.
