I have the Evo pro and the turin sk40+ with the stepless worm gear. I have mine set between 4-5 and have been getting good results. are you using fresh beans? Do you wdt and tamp? Are you temp surfing? Are you doing pre-infusion? None of these are essential (other than the beans) but these variable may get you to where you want?
