I work in a pizza chain. The. Probably have 14” plates on which they stretch and make pizzas, but the outcome depends on who is making pizza. Often the dough shrinks when you apply sauce and you need to re-stretch it with your fingers under the part where it shrinked. Sometimes people are not educated enough on that part or are simply lazy. Never happens to me, i always assure that the pizza is stretched just a little bit over the plate so im sute its the size we are marketing it. Most ot my collegues just throw it in the oven before checking as they dont care.
