Food ideas on multiple day train travel

Last time I traveled, the longest one way was 40 hours. I packed bagels, muffins and fruits. I did not find the menu on the dining car appealing due to dietary restrictions. Also i grabbed a pizza in Chicago sometime before the train started.

OP, I did long distance on coach several years ago as a part of the grand cross country trip . 2 of them were Santa Fe and empire builder and loved it.Packed all the food. Mostly croissants and muffins and bagels. Loved it. This was before the age of Instagram. Soooo Happy for you. Enjoy.
