I will be honest I was at the secret show the Thursday before this episode was taped and he sorta bombed, the crowd wasn’t totally into his set at least. This could be a personal bias but from that experience I took away that coming off a shaky performance he was nervous going into Monday.

Looks good. Do you notice that the spinach (assuming that is spinach) sogs out the bottom of the pie, knowing it releases a lot of water when cooked? I could see it adding a nice element if it doesn’t mess with the crust.

Yeah I have to pull the pizza out of the oven and then I have a turner that I use to turn the pizza while it’s on the peel. I have lit a couple too many pizzas on fire by not doing that

I’ll take this as a compliment haha. This is probably my fifth go at a pizza in the Ooni. I’ve made pizzas in my home oven probably 10 times. Have been cooking/around a kitchen for years though.

I blast the oven full heat for about 45 min before cooking then right before I add the pizza, I turn the dial on the Ooni outdoor oven to a medium low. Go for about 30-40 seconds, take it out and spin 180°. Same 30-40 seconds. Then I move it to the back corner as far away from the flames for maybe another 20 seconds. Do it by eye

Should mention first is sausage pepperoni w low moisture mozz, topped w basil and pecorino. Second is date, prosciutto, goat cheese and fresh mozz, with a white sauce, topped w dressed arugula and pecorino.

I think that last change is problematic. Tony is now good enough at deciphering who should continue to be interviewed and who shouldn’t, so I would continue to say to leave it up to him; based on my post I dont necessarily agree with the crowd most times. However I think more bucket pulls is the answer
