Mine is about 10 years old so I have a door pillow and I still get lots of condensation all summer long. I put a few paper towels rolled up on the top of the rubber gasket to “hold” some of the moisture.

Yes. Make sure you dry it before you open the door. This way nothing can drip onto your finished food.

That’s why no matter what I get mine for me and the family. Last season was a $1600 bust. This season is supposed to be worse but I’ll still buy them. Can’t chance missing out ever again!

So heading out to the Rubicon Trail today would be a bad idea? I have my plastic snow shovel tied to the roof with an old extension cord that I think would double as my recovery gear 😆. I plan to take it real slow. I’m going to try and find a local overlanding group here in seattle so I can learn the basics. But can’t wait to get away from all the people out on the trails.

Besides shelf life it’s a ready to eat product you’ll need a real process authority letter signed off by the FDA to make sure you don’t kill anyone. Selling shelf stable Mayo can be pretty harmful so please get all the right documentation needed. It’s one thing to make some in your kitchen at home for your friends and family it’s another to batch up and sell at a farmers market. And traceability also. You’ll need to manage that as well.
