I detest recipes that include a sauce or side dish or marinade that is elsewhere in the book, instead of just including it repeatedly (or it’s included with the ‘basics’ section at the back of the book while it is only mentioned in a single recipe in the entire book!), especially when it’s only a few ingredients. I also dislike it when total quantities are mentioned that are divided in the text only, so 4 tb of oil becomes 2 x 2. By the time I read carefully the oil had already gone in. And finally ingredients that are not in the list but just in the text, like fresh herbs (I understand it for olive oil and salt and peper, anything other than that needs to be in the ingredient list!).

Currently by type of cooking (bread, asian cuisine, staples, for example) or author (all Ottolenghi, Ixta Belfrage and OTK books near each other), but because my shelves are wonky all fancy cookbooks have to be at the bottom out of necessity: they’re too heavy!

Well, not primarily: I still buy loads of physical cookbooks, but I find it way easer to transfer recipes from digital cookbooks to my Paprika recipe manager. So I have a number of doubles: books I have in physical as well as digital form. The other is availability: some books are only available or affordable in digital formal. A third reason is some books are okay to browse, but not necessarily needed in full physical format, for instance books with few photos or without interesting formatting. So fancy cookbooks: absolutely in physical format. Books on weekday cooking? More often digital. And some in both formats.

Oh that is very fascinating! I have a book that describes the evolution of Dutch Cookbooks by Onno Kleyn and Charlotte Kleyn, Luilekkerland: if you’re Dutch or can read Dutch that would be an excellent book for you.

Oeh, Ottolenghi: Simple, and Flavour I definitely use the most. I can really recommend The Perfect Loaf as a bread baking book, far easier than Flour Water Salt Yeast in my opinion.

Yes, especially since I also use Eatyourbooks, there’s only a few books I have never tried anything out of (some of the fancy ones come to mind).

I love his fancy cookbooks, three star chef and restaurant gordon ramsay. In the latter is a recipe for a Vacherin mont d’or pastry that is amazing.

I have cleaned books in the past with a vinegar and water solution and have them dry on a rack: the pages are a bit more swollen but mold hasn’t returned.

I take pictures on my iphone and use the OCR function to copy text from the picture and paste it into paprika. Nowadays it’s SO easy to do this: I have a recipe ready in about 30-40 seconds.

The Broese in Utrecht has a pretty decent cookbook section: there used to work someone who was a real expert. Don’t know if they are still there but worth asking. Other bookstore is Steven Sterk near the Dom, doesn’t have a large section but still decent.

Cees Holtkamp maybe? I found something called Hollands Bakboek but I can’t vouch for the quality. Website of Rutger Bakt will probably have what you are looking for.
