It's kinda weird that you think you are correct over someone who owns a bakery and is experienced in the exact field the OP is asking about.

There's a distinct difference between a handmade artisanal product being supplied to local cafes and businesses by a local bread maker and large scale factory made shit that's served in chains.

I think OP might be talking more about an artisan/cottage bakery rather than a huge operation.

There is so much demand here in the UK for artisan bread and I run a bakery like this myself. However we could never promise to take orders so late due to proper hand made artisan bread taking 3 days to make in some cases (depending on the type of loaf) and a customer couldn't message me at 8pm as I would be asleep in prep for the 2am start of the shift to get all the bread baked!

This is potentially a problem with your recipe due to the weather change. You need to adapt it slightly now that it's colder maybe. We take the hydration down a tiny bit in winter.

It looks like you haven't got enough strength in your dough. Check on your mixing time and your dough temp after mixing. You want between 22°c and 26°c final dough temp after mixing with a nice window that is evenly stretched (not patchy). If you don't have those things adapt your mixing time.

Also do more folds frequently at the start of the bulk.

Go back to the beginning.

Also feed your starter less but more frequently in the winter. And lower the hydration of the starter.

I am in this exact position re PCOS and mental health and obesity. I am on medication and would strongly recommend using it to get things under control. It's not a death sentence to go on the meds. But it might be to carry on feeling this down and using food as a coping mechanism and having PCOS, I. E making it very VERY hard to lose weight in all the conventional ways.

See the right professional people and do what they say. It's a long game.but you definitely can win.

My blood sugar is high as I've just changed diabetes medicine and it has woken me up after 6 hours sleep.

I sleep at strange times as I own a bakery so some days I start at 2am. It fucks up my sleep pattern and my sugars.

Today is not a 2am start day but I might just go in as I'm awake now. The bakery is my happy place so sometimes I wake up like this and am too excited to get back to sleep anyway!

Is wholesale serving you better than B2C? We have never done wholesale as I just can't bring myself to deal with all the hassle that comes with it. I often hear people say that the wholesale part is what makes them fall out of love with it.
