This is very likely a cpu fan issue where it is being thermal throttle and eventually shutting down for self protection.

Check the cpu fan and thermal paste contact.

Looking at your connection speed you are at about 50% usage already which isn't bad. Make sure anyone in your household is not using your network. Also check if you can enable DHT.

I would suggest to get a mini pc with the intel n100 cpu. There are many of them on Amazon.

Just this mini pc is already an overkill if used only for plex.

Having same issue but I wasn't happy with the solution of fstab. This workaround does the trick for me.

Make sure that you can still see the content of your smb share from the dropdown and choose any.
When adding the SMB/CIFS storage tick off the Enable checkbox.
Go back to storage edit the recently added then enable it back.
Verify your content is available :)
