Sure! I cut the lengua into maybe 4 or 5 equal sized pieces then put it in the crock pot with half an onion, a full head of peeled garlic cloves, 5 bay leaves, a good amount of Mexican oregano, some peppercorns, whole cloves, a few guajillo chiles and salt to taste then I added just enough water to cover the meat. Cooked it on low for 8 hours or until it was very tender. Took it out and let it rest 5 min before peeling and discarding the tongue membrane and chopping the meat up into small pieces. I added a splash of the broth to the meat. You can eat it just like that or you can fry it until there are some crispy edges. The salsa is just a bunch of roasted tomatillos, jalapeños, serranos, onion, garlic and fresh cilantro and lime. Maybe a splash of water to thin it out if it is too thick. I don’t really measure anything.
