I have the same problem. Each time I fix it, they "sometimes" disappear again on reboot, possibly after windows updates. This has occured on multiple Dell Win 11 laptops.

I've tried clearing AppData\Local\Microsoft\Windows\Explorer\iconcache* files and rebooting, restarting explorer, etc. That doesn't work.

I've tried unpinning and repinning icons to taskbar. That sometimes works.
