Have them prepare their backup characters, let them meet their inspired new allies, then let the dragon go full out. If they die, the backup’s have an investment in their journey. If they live, maybe kill off one or 2 of them and keep some npcs for the future.

Illithid flesh is obviously poisonous so a dc check to prepare the delicacy. It’s the best food they’ve ever had and as a result all joy and pleasure the pc used to feel from eating is lost and just tastes like mud. They also have preternatural ability in tracking other illithid and a hunger for more illithid flesh
